I'll Have the Soup

Hi Guys!  Just checking in to remind you that it’s almost time to start your meal prep for the week.  If you are at a loss or would like a new idea … how about soup?
 
A friend of mine contacted me yesterday and she was a bit under the weather.  She asked if I would help her with her meal prep and bring her some soup.  What a great idea!  I started flipping through my favorite soup recipes and I couldn’t decide which one to prepare so I chose three of my favorites:
 

 

 

 

Chicken with brown rice and mushrooms – chicken soup is the perfect meal if you are under the weather or if you just want a delicious comfort food.  I add onions, carrots and celery and I replace egg noodles with brown rice because the rice holds up in the broth better than noodles.  Also, I like to use boneless, skinless thighs instead of breasts for added flavor.
 
Lentil – This hearty soup is high in protein and full of flavor.  I use salt, pepper, cumin, a dash of cayenne plus cilantro and a splash of fresh lemon juice.

Butternut Squash – Creamy with a bit of a bite because of the fresh ginger.
 
Soup made in your own kitchen is healthy, flavorful, low in calories, high in nutrients and very inexpensive.  Soup is the perfect meal to make ahead of time because you can make a huge pot and freeze it if necessary.  I prepared 3 pots of soup today in less than 2 two hours and had enough for my friend and for myself.
