Recipe of the Week - Egg White Quiche

What you'll need:


1 frozen pie crust

2 cups egg whites

1/4 c milk

salt and pepper

5 slices baby swiss cheese, cut into small pieces

1 medium onion, choppped

1.5 c sliced mushrooms

3 c fresh baby spinach


What you do:


Preheat oven to 325 degrees

Whisk together egg whites, milk, salt and pepper in a large bowl and set aside

Saute the onions and mushrooms until tender

In the pie crust layer the spinach, onions and mushrooms and cheese

Slowly pour the egg white mixture on top (be careful, it may drip over the sides)

Bake for 45-55 minutes, or until the knife in center comes out clean

Let stand 10 minutes before serving
