Last night I tried something I never even heard of: Overnight Oats. I’ve been eating instant oatmeal for years and I recently tried the steel cut version – still instant. I remember when I was little and my mom would make oatmeal on the stove. It seemed to take forever and it wasn’t complete until I put a bunch of sugar and butter on top. Times have certainly changed.
The overnight oats seemed appealing to me for a few reasons: (1) alternative to regular oatmeal and I love to try new things (2) I can make it ahead of time and cuts down on the time I spend in the kitchen before my morning workout (3) It only has 6 ingredients and takes 10 minutes to prepare. You can’t beat that!
The recipe for the Peanut Butter and Banana Overnight Oats came from the OrganizeYourself Skinny website. It was easy to prepare and I was looking forward to trying it this morning.
It turned out okay. Cold oats are something that will take some getting used to but I did enjoy the finished result. The recipe can be made up to 3 days ahead of time so I made three jars of oats. I played with the idea of only making one just in case I didn’t like it. Honestly, if I had only made one I probably wouldn’t make another one. I liked it … it was just different. I saw another variation on the website for a chocolate covered strawberry version. I’m definitely going to give that a try!
